During the finisher stage of our supply chain, animals go onto a finisher ration and are taken through to the correct specification for slaughter. By focusing on nutrition in the finishing yards, we’ve seen a rise in beef marbling quality.

A slower finish on a starchy diet creates the marbling we desire; because it’s the conversion from starch to glucose in the rumen that creates the chain reaction of intramuscular fat/marble. The unique way we pay our finishers for this product is down to the best genetics and optimum feeding. We pay a set base rate, and a pence per kilo premium for higher marbling score, rewarding the highest-quality marbled beef.

No - each farm can participate in whichever aspect of the supply chain suits their farming system, whether that just be calf rearing or taking them on at the growing stage through to finishing. If you are able to take the animals right through the chain, then that is great!

No - there is no correlation between back fat and marble. Backfat is controlled by protein levels and marble controlled by starch.

The Wagyu cattle, up until late store, are fed the same as any other commercial animal. It is only in the latter store stage and finishing period that the diet is specific.

The marble is graded using the Australian system, graded from 0 (no marble present) to 10 (highly marbled).
