Transportation:

Transportation is a key factor in the supply chain. Less movement between farms, leads to less checks in the animal’s performance. Moving at the correct times with appropriate temperatures enables us to prevent unnecessary stress, while keeping moves as localised as possible. For our finisher farms, we use reputable hauliers of the highest standards to take the cattle to their final destination. Arrival at the abattoir and atmosphere in the lairage is crucial, to ensure the animal remains relaxed and stress free, which in turn contributes to the colour and quality of the meat.

Processor:

We work in partnership with one of the leading UK abattoirs to ensure our cattle are processed to the highest standards. We are now using software developed in Japan to quality grade our carcasses. Although this grading technique is done worldwide, it is a new technology in the UK. The technology measures muscle size, marble quality and marble fineness. This generates our marble score, removing the inconsistency of visual grading. As this system is recognised globally, it is the key to export opportunities, allowing us to sell British Wagyu across the World.

No - each farm can participate in whichever aspect of the supply chain suits their farming system, whether that just be calf rearing or taking them on at the growing stage through to finishing. If you are able to take the animals right through the chain, then that is great!

No - there is no correlation between back fat and marble. Backfat is controlled by protein levels and marble controlled by starch.

The Wagyu cattle, up until late store, are fed the same as any other commercial animal. It is only in the latter store stage and finishing period that the diet is specific.

The marble is graded using the Australian system, graded from 0 (no marble present) to 10 (highly marbled).
