The Wagyu Breed is very different to commercial standard beef animals! The Breed qualities are the high marbling potential within the muscle. This makes selecting cattle challenging as it does not correlate with back fat. The carcass grade and marbling are heritable traits that can be manipulated and influenced by diet.

We work alongside Genus ABS who provide us with chosen semen genetics and distribute them onto farm. The genetic selection of sires is critical for us. It’s important to choose a bull with a good daily live weight gain to suit the system. Our priority is to select based on marble score and marble fineness, to ensure we maximise the eating quality, which in turn allows our finisher farms the opportunity to gain maximum deadweight price.

These selected genetics provide excellent fertility rates and allow for easy calving. Genus also work with us on DNA testing, sire verification and data collection. Through this we can analyse every part of the animal’s performance from daily live weight gain, marble score, to meat tenderness and eating quality.

We are the first sire-verified integrated beef system into retail in the UK, which essentially means that not only do we know it’s Wagyu, but we know the exact sire and the full story of each animals’ life.

Frequently asked questions

No - each farm can participate in whichever aspect of the supply chain suits their farming system, whether that just be calf rearing or taking them on at the growing stage through to finishing. If you are able to take the animals right through the chain, then that is great!

No - there is no correlation between back fat and marble. Backfat is controlled by protein levels and marble controlled by starch.

The Wagyu cattle, up until late store, are fed the same as any other commercial animal. It is only in the latter store stage and finishing period that the diet is specific.

The marble is graded using the Australian system, graded from 0 (no marble present) to 10 (highly marbled).
